Smooth, sweet and beautifully balanced, this washed coffee from Huehuetenango, Guatemala, offers notes of dried apricot, cocoa and pecan. Since first working together in 2022, we have admired the dedication of producer Andres Ramirez and his wife at their small family farm. A wonderfully approachable single origin coffee, with rich sweetness and delicate fruit.

This fully washed lot captures the balanced character we love in Guatemalan specialty coffee. Dried apricot brings gentle fruit sweetness, complemented by rich cocoa and the rounded, nutty character of pecan. A slow fermentation adds depth and a smooth texture, while the washed process keeps the flavours clean and distinct. As the cup cools, delicate citrus notes emerge alongside sweet dried fruit, bringing freshness without overpowering the profile. The result is an approachable, easy-drinking coffee with plenty of sweetness and a satisfying finish.
Andres Ramirez is a first-generation coffee farmer working alongside his wife at Yich Kalnahl, their 1.2-hectare farm in Concepción Huista, Huehuetenango. Since establishing the farm, the couple have dedicated themselves to improving their knowledge of coffee cultivation and processing.
Surrounded by dense forest and rolling mountains, Yich Kalnahl grows Caturra and Catuai beneath the shade of banana plants and native trees. Temperatures range from 13 to 26°C, creating a cool microclimate where coffee cherries develop slowly. The region also benefits from warm winds arriving from Mexico, contributing to the distinctive growing conditions that have made Huehuetenango one of Guatemala's most celebrated coffee regions.

Processing at Yich Kalnahl is managed by Andres wife, using fresh spring water from the farm. Within approximately five hours of harvesting, the ripe cherries are depulped to remove their outer skin and fruit. The coffee then undergoes fermentation in water for up to 32 hours, helping develop its sweetness, texture and complexity.
Following fermentation, the beans are thoroughly washed before being sun-dried on patios for seven days. This careful approach produces a clean, balanced cup, allowing delicate fruit notes and rich cocoa sweetness to shine.
